India’s favourite dish had been truncated way too much and was fast losing its authenticity to the sands of time. Someone had to revive the original flavours that would have otherwise succeeded in tickling the nostrils of Jehovah. For us, butter chicken was much more than just another recipe we were trying to perfect; it was a subject, an end in itself. It took one hallowed experiment in a catering college, executed by Chef Saransh Goila and his mate (now co-founder, Vivek Sahani), some smoked coal and a moist, tender, juicy chicken leg along with fertile imagination to make this happen! Think butter romancing chicken while swimming in a garlicky tomato pool with coal and masalas as onlookers! Wham…you have the Goila Butter Chicken!!!
